Ruli is located close to the small town of Mususa, in the Ruli Sector or Gakenke District, in Rwanda’s rugged and mountainous Northern Province.\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003e\u003cspan\u003eRuli sits at 1,920 meters above sea level, overlooking a beautiful landscape of rolling green hills and rich, red earth. A total of 1756 farmers (1104 men, 652 women) deliver cherry to the washing station throughout the season, which employs 43 permanent staff and increases by another 170 seasonal staff during the harvest period. The area surrounding Ruli has mineral-rich soil and a lush environment that is well suited to specialty coffee production. Salaverria, who also owns a farm called Finca Divisadero. This farm is located in a different mountain range than it's named for: the Apaneca Mountains in El Salvador's Ataco region. The Honey processed coffee on Mauricio's farm is picked ripe and dry fermented for 20 hours. It's dried on raised beds for 23 to 25 days. The coffees produced here tend to be floral, sweet and complex, and noticeably distinct from those grown elsewhere in Brazil. There are two main factors behind this: coffee grows at elevations of up to 1,400 meters above sea level, which is high for the country; and temperatures range from about 2°C to 18°C in winter, some of the lowest in Brazil. Combined, the high elevation and cool climate are key in slowing down the maturation of the coffee cherries, leading to an increased concentration of sugars in the bean. The result is a cup profile that is bright, transparent, and distinctive. Piatã’s relative proximity to the Equator line ensures the region’s coffee trees can experience such drastic conditions without being affected by frost, unlike other, more traditional coffee-growing regions in the country.\u003c\/p\u003e\n\u003cp\u003ePiatã’s exceptional natural characteristics also contribute greatly to the coffees’ profile. In the distant past, the whole of Chapada Diamantina was completely under water, slowly eroding over millions of years — leaving behind soil that is nutrient-rich and slightly soft. This soil, along with the above-average local humidity, is home to a healthy and diverse ecosystem that includes some 1,600 individual plant species. Normally coffee seeds develop as a pair with flattened facing sides, but sometimes just one seed develops and forms an oval shape to occupy the entire space within the coffee cherry. With panoramic views and an ever-changing East African sky, this washing station lives up to its name. Heza Washing Station processes its coffee by pumping spring water from a nearby natural spring. During the washed process, freshly harvested cherries are delivered by coffee farmers to the Heza Washing Station, then floated and hand-sorted for ripeness upon arrival. The cherries are pulped and fermented for 36 hours. This fermentation takes place underwater, under a plastic tarp. After fermentation, the parchment is sometimes ‘footed.’ During footing, a team will agitate and dance on the slippery coffee parchment, helping to loosen any remaining mucilage clinging to it.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eIt is then rinsed in fresh water, graded by density, and left to soak for another four to six hours in the final rinse tank. The parchment is carried to covered drying tables, where it spends between six and 48 hours pre-drying. During this time, it is hand-picked for under-ripeness, over-ripeness, insect damage, and visual defects. It is then moved to traditional African-raised tables, where it slowly dries for 16 to 20 days (depending on the weather) until it reaches the ideal 10.5% moisture level. During the natural process, coffee cherries are floated and hand-sorted, then placed directly on the drying tables. The whole coffee cherry spends between 25 and 30 days drying in its own skin, slowly turning from a deep red to a prune-like purple-black once it's fully dry and at the preferred 10.5% moisture level.\u003c\/p\u003e\n\u003cp\u003eLife has a different pace on Nkonge Hill. There is a stillness on the hill that is hard to find anywhere else in Burundi. You can walk for stretches without seeing anyone. Dirt roads cut into the hill’s steep slopes, revealing panoramic views of banana trees and lush tea plantations. The high elevation of Nkonge produces coffee cherries that are harder and slower to ripen. Natural springs flow from the hill, ensuring its soils are always well watered. Patches of onions, tea, wheat, cabbage, maize, cassava, and peas can be found growing alongside coffee in this Hill’s rich soils.
